Job Title:                                Sous Chef (Conference and Banqueting)

Department:                          Kitchen

Responsible to:                     Executive Chef

Hours of Work:                     45 hours a week, to include weekends and bank holidays as per the rota.

Overall Purpose:                   To assist the Executive Chef prepare top class cuisine/dishes using fresh local ingredients.

 

Specific Duties:
Assist the Executive Chef, Kitchen management team in retaining the 5 star standards.
To run and be a ‘hands on’ presence during service as and when required in the Conference and Banqueting kitchen.
To assist/help in all kitchen outlets when required
Oversee the C&B kitchen to include freshness of ingredients, level of staffing, mis en place and food wastage.
Assist with menu writing and dish creating for C&B.
To oversee the staff canteen and help write staff canteen menus
Assist in the managing of the kitchen brigade of over thirty chefs and porters.
Help to recruit and train C&B chefs and kitchen porters.
Ensure the kitchen is organised with the correct daily function sheets, mis en place, job lists and that jobs are prioritised in the correct order.
Assist in maintaining a professional level in the C&B kitchen adhering to the Standard Operating Procedures and Policies.
Assist and prepare the day to day ordering for the C&B kitchen.
Ensure that the C&B kitchen areas are clean and meet safety standards.
Assist and maintain with HACCP and Health and Safety procedures.
Ensure that all kitchen equipment is fully functional, stored correctly and staff are looking after the equipment.
To attend function sheet meetings when required.
Liaise with Sales and Events team regarding functions and amendments.
Attend and produce menu tastings and interact with clients.
Assist in the organisation and running of all events.
